Naples is a city that also lives on craftsmanship and there are many “artisans of taste”. Small businesses that produce some of the gastronomic excellence of our territory such as coffee, sfogliatella and mozzarella.
In our ARTISANS’ TOUR you will have the opportunity to witness the production process of these three culinary wonders and you can sip a good cup of coffee and delight the palate with a fragrant “sfogliatella” and with a very fresh mozzarella.
The ARTISANS’ TOUR develops between the renewed Piazza Garibaldi and Piazza Carlo III, where the majestic building of the Albergo dei Poveri stands out, and opens with a visit to one of the smallest and oldest Neapolitan roasters. The whole coffee production process is observed: from the choice and roasting of the bean to the preparation of the blend which is then tasted together. In the ARTISANS’ TOUR we tell when and how coffee arrived in Naples at the beginning of the 19th century and what is the cuccumella in use in Naples until 1930. In the ARTISANS’ TOUR we reveal how to drink a Neapolitan coffee and what hides behind the ritual of “suspended coffee”.
In the ARTISANS’ TOUR we have the pleasure of being hosted in a Neapolitan pastry shop that has made the sfogliatella its trademark. Not only curly and shortcrust, but with classic filling or according to seasonal products, not only sweet but also salty. In the ARTISANS’ TOUR the team of pastry chefs will show us the basic steps of the creation of this cake invented 400 years ago by some nuns of a monastery near Salerno. A dessert born from a mistake and has become a symbol of Naples like pizza and “baba”.
And we conclude the ARTISANS’ TOUR with a visit to one of the few cheese factory in the city to observe the most important moments of the creation of buffalo mozzarella: from the curd to the mozzarella. In the ARTISANS’ TOUR you will finally understand the difference between mozzarella, fiordilatte and provola. And you can taste each of these products. The ARTISANS’ TOUR is a different way of getting to know some aspects of the city of Naples
